Calgary Chef Flies To New Heights
It was a big week for Justins. First, for Canada's new Prime Minister-elect, Justin Trudeau, who won a landslide victory on Monday, and now Chef Justin LeBoe, who has helmed Calgary's Pigeonhole to the top of EnRoute Magazine’s Top 10 New Restaurants list for 2015
Mad props to Chef Justin, who we’re big fans of, and who has been a long-time supporter of MRCA (that was him rockin’ an Indy jacket in the banners for the Rare Collection we introduced earlier this year).
Chef Justin hit it out of the park with Pigeonhole, but he’s been playing in the major leagues for years. He ranked third on the enRoute list in 2009 at Rush, then climbed to second in 2012 when he reinvented Southern comfort at Model Milk in an old brick dairy building.
Now at Pigeonhole, located next door to Model Milk, customers are clamouring for his small plates that meet at the intersection of Southeast Asian street cooking and polished European tavern fare.
Ably backed by chef de cuisine Garrett Bruce Martin, Chef Justin and the entire crew at Pigeonhole are killing it.
